Mayonnaise

Recipe for a good basic mayo enjoyed as it is or customized by you to make – a classic tarragon mayo, with chili and smoked paprika for a Texas-style burger or as an aïoli with lots of garlic and lemon for your fish & chips.

For approx 1pint:

  • 3-4 dl. good, neutral oil. I prefer macadamia or avocado oil (avocado oil gives green mayo)
  • 2 egg yolks
  • salt
  • lemon juice and lemon peel
  • 1 tbsp dijon mustard

Then you can customize to suit your meal or snack. Perhaps with garlic and tarragon, chili and smoked paprika or with fresh herbs and sea salt.
First, make sure all the ingredients are the same temperature. Then mix the egg yolks until they are airy and light. Pour the oil in slowly and in a thin jet while whisking. When the mayo has the desired thickness, add the remaining ingredients. Lemon peel makes the mayo thinner, so don’t hesitate to do a thick mayo from the beginning.. Put it in the fridge.

Bread for multi-purpose

– especially delicious for burgers and hot-dogs..

  • 2 finely grated carrots
  • 2 finely grated sweet potatoes
  • 4 eggs
  • 3 tbsp almond flour
  • 3 tbsp flax seeds
  • 1 tsp melted butter
  • salt/pepper
  • Sesame seeds

Mix all the ingredients and leave a spoonful of dough on a piece of oiled baking paper. press the dough until a height of approx. 1-1,5cm. Sprinkle with sesame seeds. Bake the buns in the oven at approx. 175c. in 20-25mins.

Rye bread

– the caveman way

This bread is very tasty, soft and full of seeds – it is quite close to the traditional rye bread texture, but even more juicy and crispy. This bread is delicious and healthy, but take it easy on the slices as it contains some calories.

Ingredients:

  • 300 g grated carrots
  • 300 g chestnut flour
  • 200 g pumpkin seeds
  • 150 g flax seeds
  • 100 g sesame seeds
  • 300 g hazelnut, almond and pecan (100 g of each)
  • 1 handful of goji berries or raisins – optional
  • 2 tsp salt
  • 5 dl water
  • coconut oil for the form

Mix all the dry ingredients and add water. Mix well and pour the dough into an oiled form. Smoothen the surface with a wet spatula and sprinkle with your favorite topping. Bake the rye bread at approximately 180c for 60-70mins. Take it out of the form immediately after and let it cool down on a grill.
